Sowing the seeds
Can take up to 6 weeks to germination! Soaking the seeds overnight may speed up the germination. Sow 3 to 4 seeds within a 6 inch interval. Cover with ½ inch of soil and a bit of mulch to keep it cool and moist.
Thinning
When thinning, use scissors to cut the parsnip tops instead of pulling up the unwanted parsnip. Established plants should be thinned to 3 to 4 inches apart.
Harvest
The parsnips are ready when the tops die down. Harvest some of the parsnips after the first light frost to have a nutty flavour. Can continue to harvest into the winter until the ground freezes.
