Sowing the seed
A cool weather crop that can be planted in the fall and left to overwinter, plant 4 to 6 weeks before the first frost. Sow 1/2 inch deep, about 12 seeds per foot of row.
Thinning
When the seedlings are 1” tall thin to 4” apart.
Harvesting
Early on, harvest individual leaves when the weather warms up, one can use a knife to harvest the whole plant close to the ground. Spinach leaves are more tender when they are harvested before the plant has bolted (when the flower stalk appears).
